Pataniscas PKU de cenoura e beterraba | PKU Recipe of Fritters with carrots and beets

Receita das Pataniscas:
Ingredientes
1 e 1/2 chávena de cenoura ralada; 1/2 chávena de beterraba ralada; 1/2 chávena de farinha hipoproteica; 1/2 colher de sopa de cebolinho; 1 colher de sopa de salsa; 1 colher chá de fermento em pó; 2 ovos hipoproteicos (cerca de 20g substituto de ovo inteiro com 80ml água).
Preparação:
Colocar os ingredientes todos, pela mesma ordem, numa tigela. Mexer. Com ajuda de colheres, colocar bocados da massa numa frigideira regada com azeite, para fritar. Quando estiverem fritas retirar para um prato ou travessa com papel absorvente para secar o excesso de óleo.
Servir assim ou esperar que arrefeça. Acompanhar com uma salada.


PKU Fritters Recipe:
Ingredients
1 and 1/2 cup of grated carrots; 1/2 cup of grated beetroot; 1/2 cup of low-protein flour; 1/2 tablespoon of chives; 1 tablespoon of parsley; 1 teaspoon of baking powder; 2 low-protein eggs (about 20g of egg-replacer mixed with 80ml of water).
Preparation:
In a large mixing bowl mix all the ingredients. Start mixing the carrots and beets and then add the flour and chives and for last add the parsley the baking powder and the egg replacer. Heat a few tablespoons of oil in a large frying pan and drop heaped tablespoons of the mixture into the hot oil, flattening the little cakes down with the back of the spoon as you go. Let them cook for about 2 minutes each side until golden, and then transfer to a waiting plate to dry the excess of oil.
Let them cool to room temperature or eat them warm if you prefer. Serve with a salad.
